Saffron Recipes

Saffron as a 100% natural flavoring and intoxicant is used in various kinds of dishes and hot and cold drinks:

- Different kinds of meat barbecues:
Lay the meat in a blend of grated onion, lemon juice and milled saffron for 1 up to 2 hours, and then barbecue it.

- In soups:
For example American cabbage soup: Add milled saffron to the material of a soup and enjoy its flavor and color.

- Hot drinks:
For example Saffron Tea:
6 cardomoms
1/2 teaspoon saffron threads
juice of 1 lemon
4 teaspoons honey
4 cups water
4 teaspoons china tea (optional)

- Cold drinks:
For example saffron drink: Blend sugar and milled saffron. Add water and mix them properly. Finally decorate it with some colorful ice piece and enjoy your drink.

- Paella (Rice):
You can color some of your rice by the second or third method mentioned in our How to Use Saffron page and use the result for decorating your dishes. Or you can add the saffron paste to your rice during cooking it and color your whole dish.

- Saffron Risotto:
2 cups rice
1/2 teaspoon saffron threads
1/2 teaspoon cummin seeds
1 diced apple
6 diced dried apricots
4 cups vegetable stock
1/2 diced onion
1/2 cup flaked almonds (toasted)
juice of 1 lemon
1 tablespoon olive oil

Simmer apricots and saffron in water and lemon juice for 20 minutes. Meanwhile bring vegetable stock to boil. In a separate pan saute onion in olive oil then add rice and cummin and cook for 5 minutes stirring continually. Gradually add vegetable stock and then the apricots, saffron and lemon juice. Finally add apple and almonds. Stir well. Cover and leave till all liquid has been absorbed.

- Saffron Buns:
1lb Strong plain white flower
5oz Mixed currents, sultanas & peel
1 teaspoon Salt
1/4 pint (approx) Warm milk
2oz Butter
2oz Vegetable fat
1/2gram Saffron
1oz Fresh yeast
2oz Sugar

Steep saffron in a little hot water overnight.
Mix dry ingredients and fat - then add liquids. Leave to prove (rise) once. Once doubled in size, knock down and make into 15-20 buns. Leave to rise for a further 20mins. Bake at 200C for 20minutes.
